As much as I love cooking sometimes the laziness takes over. It’s not so much the act of cooking, but more the preparation. Grocery shopping can be fun, but sometimes the Millennial in me just wants to exert zero effort and instantly have food delivered to my door. For this very reason, meal delivery services exist. They send you exact quantities of ingredients needed to make healthy and fresh meals a few days a week! Unfortunately, most of these meal delivery services are heavily based on animal protein and dairy. The only fully plant-based brand that offers this service (that I know of) is Purple Carrot. They offer only vegan and organic ingredients for you to create some incredible and simple recipes. Needless to say, I finally decided to give it a go and order my first box last week. The three recipes were Jackfruit Shiitake Stir-fry, Butternut Squash Caponata, and Buffalo Tempeh Tacos.
Who’s excited for the Super Bowl?! To be honest, I don’t really care for football but I always enjoyed the social aspect of this event, the commercials, the half-time show, and of course the food. In my experience I’ve noticed that anything with buffalo sauce and chicken is pretty much a staple item to have on Super Bowl Sunday. Buffalo chicken wings, buffalo chicken wraps, buffalo chicken hoagies, buffalo chicken dip, etc. Some ooey, gooey buffalo chicken dip sounded amazing so I decided to create my own vegan version to satisfy my craving.
On March 19, 2017, I met my best friend. She was quietly laying in the back corner of the puppy playpen at the Humane Society animal rescue center while her siblings and other puppies whimpered, barked and got all the love from potential adopters. I had originally seen her sister online but when I got there, she was already being adopted. It didn’t matter though because I already had my eye on my girl and she had hers on me too. Her sad eyes did not change, but wherever I moved her eyes followed and brows twitched.
As we bring in the new year many of us like to celebrate with family and friends. Figuring out what food to have for guests is always a challenge because sometimes (always lol) finger foods is just not enough to balance out the number of celebratory drinks being consumed on New Year’s Eve. If this sounds familiar, arroz con pollo vegano can be your solution.
First of all, I’d like to say happy holidays to everyone! At this point, you’ve either gotten all your gifts weeks ago (like a responsible, smart adult lol) or you’re scrambling to get some last minute shopping done (like me). As a result, traffic becomes more of a hassle, people can become more unbearable, and you become Ebenezer Scrooge! Before you become this negatively-spirited Christmas icon, remember all the wonderful and magical things about the holidays…primarily all the yummy food and sweets!
I first encountered this bite of deliciousness a couple of years ago at a Spanish tapas restaurant and immediately fell in love. I found myself reaching for more and more little breads as the night progressed and I remember thinking I can eat these all day and every day because they were that good!
