Vegan PB & Carrot Pupcake

On March 19, 2017, I met my best friend. She was quietly laying in the back corner of the puppy playpen at the Humane Society animal rescue center while her siblings and other puppies whimpered, barked and got all the love from potential adopters. I had originally seen her sister online but when I got there, she was already being adopted. It didn’t matter though because I already had my eye on my girl and she had hers on me too. Her sad eyes did not change, but wherever I moved her eyes followed and brows twitched.

The meet and greet rooms were being occupied so I decided to sit beside her, feed her treats and scratch her soft little head through the playpen barrier while I waited. Finally, one of the rooms were made available so I quickly jumped and asked to play with the little golden-yellow pup all the way in the back. Once the volunteer set us up and we were together, at last, it was one of the happiest moments in my life! I felt like a little kid knowing I was going to adopt a puppy that day. I think it was a happy moment for her too because she immediately peed and then ran into my lap, whimpering and licking my face non-stop.

 

 

Needless to say, my heart melted and I couldn’t NOT take her home that day. The whole time I was filling out the paperwork, she stayed curled up in my lap and refused to move. In fact, she fell asleep and just looked so at peace. I named her Lupita or Lupé for short, which means “little wolf”. Since that day we have been inseparable! Some may say I spoil her but I just think she deserves all the love in the world! LOL

When I adopted Lupita she was three months old, so last month, December, was her very first birthday! You only turn one year old once in your life, so I wanted to make it count! We had a full day of fun planned including a long morning walk, going to the pet store to pick out new toys and a new bed, hanging out at the dog park running and playing with her little friends, and finally her very own pupcake and birthday singing celebration! I know it’s super extra, but it was so much fun and hilarious to watch her be so confused yet so excited. It’s as if she knew it was her special day!

 

 

 

Without further ado, below you will find my recipe for a 100% vegan doggy cake with icing and everything! Just a warning: it might look and smell incredible (and is definitely edible and safe) but it does not taste that great to the average human. Your pupper will not have to deal with you snagging bites here and there, so I’m sure they will be happy as can be!

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup unsweetened almond milk
  • 1/2 cup all natural peanut butter
  • 1/4 cup coconut oil
  • 1/2 cup carrots, shredded
  • 1/2 tsp cinnamon
  • 1/2 cup unsweetened coconut yogurt
  • 2 tbsp smooth all natural peanut butter
  • 2 1/2 tbsp cornstarch

 

 

 

Directions:

  1. Preheat oven to 350°F
  2. Combine flour, baking soda, and baking powder in a large mixing bowl
  3. Mix in oats, peanut butter, almond milk, coconut oil, carrots, and cinnamon
  4. Grease a small-medium baking dish as pictured above and pour cake batter evenly into it
  5. Bake for 18-20 minutes
  6. Cool completely before feeding to pup or adding the icing
  7. For icing: mix coconut yogurt, peanut butter, and cornstarch with hand mixer until light and fluffy
  8. Spread onto pupcake and let the doggo enjoy!!!

 

 

 

On a final note, if you are thinking about adding a new furry member to your family please strongly consider adopting from a rescue center. There are so many dogs and even puppies, like Lupita, that are in need of a loving forever home. Many times they have endured different levels of trauma, or maybe on death row simply because nobody wants them. Do not support pet stores who sell puppies from puppy mills or disreputable breeders who force females into birthing litter after litter for their own profit.

If you are searching for a specific breed, there are rescue centers for all kinds of breeds. Just do your homework and research your options until you find what you are looking for. Be patient and diligent and I assure you, you will find your best friend!
