Vegan Spinach Quiche

For Thanksgiving, I posted some bomb side dishes made vegan, but now it’s time to start thinking about the end-of-the-year holidays, gatherings and what you can possibly bring to the table…literally. I wouldn’t say quiche is necessarily a traditional holiday food item but it definitely is a great option to keep in mind. It’s easy to make, conveniently packaged (no dish needed), and quite tasty in a savory and creamy kind of way. My favorite quiche, even before I gave up meat was always a simple spinach quiche. Nowadays my version is not only vegetarian but also vegan!

 

Ingredients:          1 STANDARD PIE-SIZED QUICHE

 

 

 

Directions:

  1. Preheat oven to 375°F
  2. Place fresh spinach in double boiler steamer and allow to steam until leaves soft and wilted
  3. Drain spinach and press out as much liquid as you can with a spoon
  4. Set spinach aside for now
  5. Place empty pie shell in oven for 3 minutes
  6. Let cool while you make Quiche Filling:
    1. Drain tofu as much as you can and add to blender
    2. Mix 2 tbsp of VeganEgg powder and 3/4 cup cold water to make “2 eggs” and add to blender
    3. Add soymilk, nutritional yeast, salt, and blend until smooth
  7. Add spinach into pie shell and sprinkle a bit of the mozzarella shreds in it as well
  8. Pour quiche filling into shell, use spatula to spread evenly
  9. Sprinkle rest of mozarella shreds over the pie
  10. Bake for 30 minutes with a sheet of aluminum paper over it so the cheese and crust does not burn
  11. After 30 minutes remove aluminum paper sheet and cut our thinner pieces to wrap around the crust alone (Check out my pumpkin pie recipe to see photos on how to wrap crust)
  12. Bake for another 20 minutes or until you are able to stick knife in the middle and it comes out clean
  13. Let cool for 10 minutes
  14. Serve and enjoy!

 

 

I’ve noticed that most premade pie shells (including the ones I used for this recipe) come in two’s so just double this recipe if you plan on having visitors this holiday season! I would say each pie is enough for 4 to 6 people depending on how big a slice they cut. Also, make sure you use a sturdy spatula to serve, otherwise you’ll end up with a sloppy slice that has fallen apart (just like mine above) LOL!
